Mesas | Salvadoran Cooking serves a brand menu rather than a UNC-published daily one, so it does not change day to day and its nutrition is the same at every campus counter that carries it.
Every figure on these pages is labelled with where it came from. There are exactly two labels, and the difference is not a quality score — it records how we know.
Published
The operator disclosed the number itself — a nutrition PDF, a wall sign, or the brand's own nutrition site. We transcribed it and did not adjust it. Each brand page links the exact document we read.
Estimated
The operator publishes nothing for that item, so we built the number up from the ingredients the menu names, using USDA reference data. Every estimated row carries its own derivation — open “How this was estimated” on the row to read exactly what was assumed.
Allergen lists are never estimated. Where an operator publishes allergens we keep the list verbatim; where it does not, the row says so. A blank allergen list means we have not verified one — it never means the item is free of anything. If you have a food allergy, confirm with the operator before you eat.

41 g
EstimatedHow this was estimated
A standard 12 fl oz can of regular cola-type soda, 150 kcal and 41 g sugars (USDA FDC 175038 carbonated cola). The listing gives no brand, size or diet/regular distinction, so this row is only valid for a regular can; a diet option would be 0 kcal.

20 g
29 g
94 g
EstimatedHow this was estimated
Build-up per pupusa: 90 g corn masa (USDA FDC 168927, ~200 kcal, 42 g carbs) + 30 g quesillo-style melting cheese (100 kcal, 8 g fat) + 1 tsp griddle oil (40 kcal), about 340 kcal each; two of those plus ~60 g curtido (15 kcal) and ~60 g tomato salsa (25 kcal). The site says fillings are mix-and-match but does not list them, so a cheese filling is assumed - a bean-only pupusa would be roughly 40 kcal lighter each and would carry no Milk allergen, while a revuelta with pork would be roughly 40 kcal heavier.
3 TacosMade Without GlutenNo allergen list on file — not a claim that it is allergen-free
3 corn tortilla tacos with ~140 g pulled pork total, pickled red onion and cilantro, plus a side of black beans and hot sauce
735

26 g
76 g
EstimatedHow this was estimated
Build-up: 3 corn tortillas at 30 g (USDA FDC 173003, ~210 kcal total) + 140 g roasted pulled pork shoulder (USDA FDC 168252, ~350 kcal, 33 g protein) + pickled onion and cilantro (15 kcal) + 130 g black beans (160 kcal, 10 g protein) + hot sauce (5 kcal). Estimated with the pork option; the shredded chicken option would be roughly 100 kcal lighter and 8 g leaner. Operator states this item is gluten free.

EstimatedHow this was estimated
Build-up: 200 g fried ripe plantain (USDA FDC 173071, ~200 kcal per 100 g fried) + 120 g refried black beans (~150 kcal). Not marked Vegan because whether the beans are refried in oil or in lard is not stated; operator states this item is gluten free.

Estimated with the pork option and the plantain side; the tortilla type is not stated, so the Wheat allergen rests on the flour-tortilla assumption, and a corn tortilla would remove it.
Yuca FritaMade Without GlutenMilk
1 plate: ~200 g fried yuca topped with ~120 g pulled pork, curtido, tomato salsa and parmesan
850
36 g

EstimatedHow this was estimated
No estimate made: the storefront does not say which sauce this is, and the plausible range across the sauces named elsewhere on this menu (chipotle aioli ~350 kcal per 2 oz, tomato salsa ~20 kcal per 2 oz) is too wide for a defensible single figure.
